Rawleigh’s Ginger is ground whole ginger root, with a hot rich flavour. Use in curries and meat dishes (especially tasty with beef). Also delicious with melon and to flavour steamed sponge puddings and treacle tart. Excellent in cakes, gingerbread and brandy snaps.
¾ c brown sugar
1 c golden syrup
¼ c milk
2 c flour
1 tsp Rawleigh's Ginger
1 tsp baking soda
1 tsp Rawleigh's Cinnamon
1 tsp Rawleigh's Mixed Spice
2 Tbsp crystallised ginger (chopped)
In a pot heat - do not boil - butter, sugar, golden syrup and milk. Allow to cool and add beaten eggs. Add dry ingredients then ginger. Stir till just mixed. Bake 160ºC 50-55 minutes in a loaf tin or 20cm square tin.
